The ornamental design for a gaming device having multiple symbol displays, as shown and described herein.

FIG. 1 is a front view of the multiple symbol displays for a gaming device of our new design, that portion of the gaming device shown in phantom is not part of the design sought to be patented and is provided for environmental purposes only;

FIG. 2 is a side view thereof, wherein the other side is a mirror image thereof; and,

FIG. 3 is top plan view thereof.
