We claim the ornamental design for a probe assembly, as shown and described.

FIG. 1 is a perspective view of a probe assembly disposed on a paddle, the probe assembly including an electronics unit coupled to a sensor probe, and a sensor screen disposed around an end of the sensor probe, the electronics unit including a display, a memory card slot, and a toggle switch;

FIG. 2 is a front view of the probe assembly of FIG. 1;

FIG. 3 is a right side view of the probe assembly of FIG. 1;

FIG. 4 is a left side view of the probe assembly of FIG. 1;

FIG. 5 is another front view of the probe assembly of FIG. 1;

FIG. 6 is a rear view of the probe assembly of FIG. 1, with the paddle transparent to show the structure of the probe assembly;

FIG. 7 is a bottom view of the probe assembly of FIG. 1; and,

FIG. 8 is a top view of the probe assembly of FIG. 1.
